LANCASTER, CA — Tucked in the heart of Lancaster, the Greenhouse Café has been a community favorite for more than three decades. What began in the late 1980s under original owner Tim McBride, later carried on by Fred Eastman, has grown into a local institution thanks to longtime manager-turned-owner Patti Sandoval.

Sandoval first began managing the Lancaster location shortly after it opened. In 2005, she purchased the business with two partners, eventually becoming the sole owner of three Greenhouse Café locations across the Antelope Valley. By 2010, she had streamlined the brand to focus on the original Lancaster restaurant. Today, the Lancaster café remains the last standing Greenhouse—an enduring piece of local history.

A Business Rooted in Loyalty

Many of the café’s employees have been with Greenhouse for years, some for decades. The head cook has served guests for nearly 30 years, while several servers have passed the 10-year mark. This longevity is rare in the restaurant industry and speaks to the culture Sandoval has fostered.

“I started working here in 2006 when I was a junior in high school,” recalled longtime employee Lauren Sandoval. “Some of my closest friendships were formed here. Now I’m married to the owner’s son, and even my nephews works alongside me. It truly is a family business.”

That family atmosphere extends to the customer base. Regulars often treat the café as a second home, with stories of guests returning week after week—or even daily—to enjoy their favorite dishes. One family recently requested Lauren to serve at a baby shower, after doing so for their first child 15 years prior.

Food That Keeps People Coming Back

Though Greenhouse is known primarily as a lunch spot, it also serves breakfast—available daily from 9 to 11 a.m. on weekdays and all day on weekends. The restaurant has been voted “AV’s Best Salad” for more than 20 years, thanks to house-made dressings and fresh ingredients.

Among the most popular items:

  • Cajun Chicken — served as a salad, sandwich, or pasta, this versatile dish has become the café’s signature staple.

  • Mandarin Chicken Salad — a longtime favorite with locals.

  • Chicken Focaccia Sandwich — praised for its flavor and originality in a crowded sandwich market.

  • Alta Salad — a newer addition featuring grilled Cajun shrimp, tortilla strips, and poblano ranch, designed to pair with AV Alta’s signature cerveza.

Greenhouse also offers banquet services for groups of 10 to 100, with menu options ranging from traditional buffets to holiday spreads. Specials like Tuesday Pasta Night (buy one, get one 50% off) and Kids Eat Free after 4 p.m. make the restaurant a practical choice for families.

A Community Fixture

The café’s legacy is as much about relationships as it is about food. From sponsoring the local AV Alta soccer team to hosting countless showers, birthdays, and retirement parties, Greenhouse has woven itself into the life of Lancaster.

“It’s consistent,” Lauren said. “When people come home to visit, the first thing they say is, ‘We have to get a Greenhouse salad.’ It’s just part of what makes Lancaster feel like home.”

With nearly 40 years of history, Greenhouse Café remains a gathering place where food, family, and community converge. And under Patti Sandoval’s leadership, its story is far from finished.

Editor’s Note: We’ve updated this article to better capture the full history of the business. Tim McBride founded it in the late 1980s, Fred Eastman carried it forward, and today it thrives under the ownership of Patti Sandoval.
